These are our family's easy and delicious meatless croquettes ♪

I wanted to make croquettes but didn't have ground meat, so I tried making them without meat ♪

700 g(about 6 large) potatoes (large)
1medium onion
1/2medium carrot
Salt and pepper to taste
1-2bouillon cubes
as neededVegetable oil
as neededAll-purpose flour

Steps

Cut the potatoes into appropriate sizes and soak in water. Finely chop the onion and carrot.

Sauté the onion and carrot in a frying pan with heated oil until golden brown. Boil the potatoes until a skewer can easily pass through.

Drain the boiled potatoes well, transfer to a bowl, and mash them.

Add salt, pepper, and crumbled bouillon cubes to the mashed potatoes and mix well. Add the sautéed onion and carrot and mix thoroughly.

Once the mixture has cooled slightly, shape it into appropriate sizes.

Coat with flour, beaten egg, and breadcrumbs in that order, and fry in well-heated oil until crispy.
