  • (Serves about 3-4) Half a whole chicken
  • 1 cuprice wine (about 240 ml)
  • 1 cupsoy sauce (about 240 ml)
  • 3 1/2 tablespoonssesame oil (about 50 ml)
  • 1little rock sugar
  • Several slices fresh ginger
  • 1little fresh basil (Thai basil preferred)
  • 5-6 clovesgarlic

    Heat sesame oil in a pan with ginger and garlic over low heat. Sauté until fragrant. (If the heat is too high, the sesame oil can become bitter and the aromatics may burn.)

    In the same pan with the remaining oil, add the chicken and stir-fry. Add the sautéed ginger and garlic back in. Pour rice wine and soy sauce around the edge of the pan in order, then add rock sugar. If you like it spicy, add chili peppers and stir-fry.

    Add basil, turn off the heat, and toss to combine.
