Crispy Dumplings with White Beech Mushrooms and Kimchi Filling

The dumpling filling is homemade Korean kimchi with added white beech mushrooms for extra color and texture!
Tips:
You can customize the filling ingredients as you like. For beginners, after mixing the filling, chill it in the refrigerator for 1 hour before wrapping; this helps prevent the wrappers from breaking or getting soggy.
If you're not confident pan-frying dumplings, use a nonstick skillet with a lid to prevent sticking.
You can make a larger batch at once and freeze them for later.

Prepare all ingredients. Wash the white beech mushrooms, shrimp, and green onions.

Remove the veins from the shrimp. Finely chop the kimchi, green onions, ginger, and white beech mushrooms.

Mix all the ingredients together in a clockwise motion. Add the seasonings and mix well.

Place the filling onto the dumpling wrappers.

Seal the wrappers tightly along the flat edge, leaving the ends open.

Pan-fry the dumplings in oil until the bottoms are golden brown.

Mix 1 tablespoon flour with 1 cup (250 ml) water, then pour into the pan with the dumplings. Cook on high heat until the water evaporates.

Serve with your favorite dipping sauce for extra flavor!
