Drunken Shrimp

This drunken shrimp recipe is one I learned from a friend in the QQ Kitchen group. It's a must-have, simple and delicious dish for Lunar New Year feasts. Prepare it 2–3 days in advance and refrigerate, so you don't have to rush on New Year's Eve. It's an impressive and time-saving dish!
Tip:
Let the shrimp and herbal wine cool completely before soaking the shrimp, or it may spoil.

Prepare all ingredients as shown.

Bring a small amount of rice wine, water, ginger slices, and green onion to a boil. Add the shrimp and cook until just done. Remove and let cool.

In a separate pot, bring the angelica root, astragalus root, goji berries, red dates, rice wine, and water to a boil. Let cool, then add the Shaoxing wine and a pinch of salt.

Place the cooked shrimp into the cooled herbal wine mixture and soak.

Transfer to a sealed jar or vacuum bag and refrigerate for about 2–3 days.

Serve the drunken shrimp, infused with the aroma of Shaoxing wine!
