Ingredients

Serves 3 servings
  1. 1.1 lbsboneless, skinless chicken thighs (about 500 grams)
  2. 1 stalkgreen onion (scallion)
  3. 1/2onion
  4. 2Japanese eggplants (or 1 medium regular eggplant)
  5. 6small sausages
  6. 3 pieceschikuwa (Japanese fish cake sticks)
  7. 2green bell peppers
  8. Bamboo skewers (or toothpicks)
  9. Salt and pepper
  10. ★ For the sauce ★
  11. 2 tablespoonssoy sauce (30 ml)
  12. 2 tablespoonsmirin (30 ml)
  13. 2 tablespoonssugar (about 25 grams)
  14. 2 tablespoonssake (30 ml)
  15. Dashi powder, to taste
  16. 1/2 inchgarlic paste (about 1 cm)
  17. 1 tablespoonwater (15 ml)

Steps

  1. 1

    Cut the chicken thighs into 3/4-inch cubes (about 2 cm). Slice the green onion into 3/4-inch pieces. Cut the onion into wedges. Slice the eggplant into thin rounds, then cut in half.

    Thread the chicken and green onion alternately onto skewers.

  3. 3

    Thread the other ingredients as you like! Try sausages with veggies, or chikuwa with veggies—kids might eat more veggies this way!

  4. 4

    Arrange the skewers on the electric griddle and grill. While grilling, combine all the sauce ingredients (marked ★) in a separate saucepan and bring to a boil.

  5. 5

    After grilling, serve with your choice of sauce or just salt and pepper.
