Remove the tentacles and innards from the squid, and clean thoroughly.

Score the squid bodies with shallow cuts about 1/2 inch (1 cm) apart.

Marinate the squid in the mixture of soy sauce, sake, and mirin for about 30 minutes.

When grilling the squid in a skillet, it may curl up, so press it down gently with a spatula.

After grilling both sides of the squid, pour in the marinade mixture. Adjust the amount of sugar to your preferred sweetness.

Cut the squid into bite-sized pieces and serve on a plate.
