For skewers with a salt flavor, sprinkle evenly with salt, black pepper, umami seasoning, and garlic powder. For skewers with sauce, sprinkle lightly with salt.

Wrap each skewer with a sheet of paper towel that has been dampened and lightly wrung out.

Wrap the skewers again with aluminum foil, making sure the paper towel is completely covered.

Soak another paper towel with vinegar and, using tongs, wipe the grill grate with it.

Preheat the broiler for 1 minute, then arrange the yakitori skewers on the grate.

If using a double-sided broiler, cook over medium heat for 5 minutes. If using a single-sided broiler, cook each side for 3 minutes over medium heat, then finish with about 2 minutes on high heat.

Transfer to a plate and remove the aluminum foil and paper towel from the skewers.

For the sauce-flavored skewers, brush with bottled yakitori sauce.
