This is a slightly sweet broth udon! I created this recipe because my child likes a sweeter broth. It's also delicious if you simmer the noodles a bit so they soak up the broth.

Ingredients

Serves 3 servings
  • 3 packsudon noodles
  • 5.3 oz (150 g)boneless, skinless chicken thighs
  • 6-inch piece of green onion (scallion)
  • 5.3–7 oz (150–200 g) assorted mushrooms (such as enoki, shiitake, or maitake, as you like)
  • 3 3/4 cupswater (900 ml)
  • 4 tablespoonsmirin
  • 1 teaspoonsugar
  • 1 teaspoondashi powder (unsalted)
  • 5–6 tablespoons (75–90 ml) concentrated noodle soup base (3x strength)
  • Fresh ginger, to taste (optional)

Steps

    Cut the chicken into bite-sized pieces about 1/2 inch wide.

  2. 2

    Slice the green onion into 1/4–1/2 inch pieces, as you like. Cut the mushrooms into bite-sized pieces.

  3. 3

    Add the chicken, green onion, and mushrooms to a pot and lightly sauté.

  4. 4

    When the chicken is lightly browned, add the water and mirin, and bring to a boil.

  5. 5

    Skim off any foam, then add the sugar, dashi powder, and noodle soup base. Cover and simmer on low heat for 10 minutes.

  6. 6

    The broth is now ready. Pour it over cooked udon noodles, or add the noodles to the broth and simmer them, whichever you prefer.
