This is a slightly sweet broth udon! I created this recipe because my child likes a sweeter broth. It's also delicious if you simmer the noodles a bit so they soak up the broth.

This is a slightly sweet broth udon! I created this recipe because my child likes a sweeter broth. It's also delicious if you simmer the noodles a bit so they soak up the broth.

Cut the chicken into bite-sized pieces about 1/2 inch wide.

Slice the green onion into 1/4–1/2 inch pieces, as you like. Cut the mushrooms into bite-sized pieces.

Add the chicken, green onion, and mushrooms to a pot and lightly sauté.

When the chicken is lightly browned, add the water and mirin, and bring to a boil.

Skim off any foam, then add the sugar, dashi powder, and noodle soup base. Cover and simmer on low heat for 10 minutes.

The broth is now ready. Pour it over cooked udon noodles, or add the noodles to the broth and simmer them, whichever you prefer.
