Tempura Curry Udon

Classic tempura udon—with a curry twist!

If you have curry and tempura, you can make this quick and tasty meal. Instead of the usual soy sauce-based udon, this is curry udon topped with tempura. Surprisingly, curry and tempura go really well together, and with plenty of toppings, it's very satisfying! It's also a great way to use up leftover curry.

Prepare the curry. You can use leftover homemade curry or store-bought curry.

Fry your favorite tempura ingredients. If using store-bought or leftover tempura, reheat in a toaster oven to make the coating crispy again.

Finely chop the green onion.

Add the mentsuyu concentrate to the curry, then dilute with hot water until you have enough to fill a bowl about 80% full.

Cook the udon noodles.

Place the cooked udon in a bowl, pour the curry soup (with its ingredients) over the noodles, then top with tempura and chopped green onion.

Add black pepper, ichimi, shichimi, or sansho pepper to taste.
