Japanese-Style Teriyaki Chicken & Teriyaki Mayo Rice Bowl

Teriyaki chicken inspired by yakitori with chicken thighs and scallions. Serve it over rice with a drizzle of mayo for a delicious teriyaki mayo rice bowl! The teriyaki sauce uses the perfect golden ratio. Recipe background: I made this because mayonnaise goes so well with teriyaki sauce! I love teriyaki burgers, so this was a hit!
Japanese-Style Teriyaki Chicken & Teriyaki Mayo Rice Bowl

Trim any tendons and excess fat from the chicken thigh, then cut into bite-sized pieces. Cut the scallions into 1 1/2-inch (4 cm) pieces.

Heat 1 tablespoon of vegetable oil over medium-low heat. Sprinkle a pinch of salt over the scallions and cook until well browned on all sides.

Remove the scallions. Sprinkle two pinches of salt over the chicken. Increase to medium-high heat and place the chicken skin-side down. Sear both sides until browned, then remove from the pan.

In the same pan with the remaining chicken fat, add [A] (soy sauce, sake, mirin, sugar). Simmer over low heat, stirring, until the sauce thickens and becomes glossy.

Return the chicken and scallions to the pan and coat them in the sauce. Serve in a bowl, drizzle with mayonnaise, and sprinkle with shredded nori.

[Variation: Japanese-Style Teriyaki Mayo Rice Bowl] Scoop rice into a bowl, top with teriyaki chicken, add an egg yolk, drizzle with mayonnaise, and sprinkle with shredded nori.
