Chop the garlic chives into 1/2-inch pieces. Finely chop the cabbage and onion.

Place all the vegetables in a food storage bag, add the salt for draining, gently massage, let sit for about 3 minutes, then squeeze out the excess moisture.

Combine the vegetables, ground pork, and ingredients marked [A], and mix well. (Tip: Mixing in the storage bag means fewer dishes to wash!)

Heat oil in a skillet and arrange gyoza wrappers to cover the bottom. Spread the filling evenly over the wrappers, then cover the filling with another layer of gyoza wrappers.

Cook over medium heat for about 2 minutes, then reduce to low heat. Add the water, cover with a lid, and steam for 8 minutes.

Flip the gyoza onto a plate, then return to the skillet and cook the other side over medium heat for about 2 minutes.

Transfer to a plate, pour the dipping sauce over, and enjoy!
