Ingredients

Serves 3 servings
  1. 10.5 oz (300 g)ground pork
  2. 1/2 bunchgarlic chives (nira)
  3. 1/4onion
  4. 1/8 headcabbage
  5. 1/2 teaspoonsalt (for draining vegetables)
  6. 20gyoza wrappers
  7. 1/4 cupwater (60ml)
  8. [A]
  9. 1 tablespoonsoy sauce
  10. 2 teaspoonsoyster sauce
  11. 1/2 teaspoonsalt
  12. 1/2 teaspoonsake
  13. 1 1/4-inch (3cm) piece garlic paste
  14. 1 1/4-inch (3cm) piece ginger paste
  15. [Dipping Sauce]
  16. 2 tablespoonssoy sauce
  17. 2 tablespoonsvinegar
  18. Chili oil, to taste

Steps

    Chop the garlic chives into 1/2-inch pieces. Finely chop the cabbage and onion.

  2. 2

    Place all the vegetables in a food storage bag, add the salt for draining, gently massage, let sit for about 3 minutes, then squeeze out the excess moisture.

  3. 3

    Combine the vegetables, ground pork, and ingredients marked [A], and mix well. (Tip: Mixing in the storage bag means fewer dishes to wash!)

  4. 4

    Heat oil in a skillet and arrange gyoza wrappers to cover the bottom. Spread the filling evenly over the wrappers, then cover the filling with another layer of gyoza wrappers.

  5. 5

    Cook over medium heat for about 2 minutes, then reduce to low heat. Add the water, cover with a lid, and steam for 8 minutes.

  6. 6

    Flip the gyoza onto a plate, then return to the skillet and cook the other side over medium heat for about 2 minutes.

  7. 7

    Transfer to a plate, pour the dipping sauce over, and enjoy!
