Crack the eggs into a bowl and beat them. Add the water, dashi powder, and white dashi, and mix well so everything is combined evenly.

Heat a tamagoyaki (Japanese omelet) pan over medium-low heat and add a little sesame oil. Pour in some of the egg mixture.

When the egg starts to bubble, roll it up.

Continue rolling the omelet in your preferred style, adding more egg mixture until all of it is used. Add more sesame oil as needed to prevent sticking.

Place the finished omelet on a paper towel and gently press to shape it and remove excess oil.
