Ingredients

Serves 2 servings
  1. 3large eggs
  2. 3 teaspoonsdashi powder (flying fish dashi or other Japanese dashi powder)
  3. 1/2 teaspoonwhite dashi (Japanese white dashi seasoning)
  4. 1/4 cupwater (60 ml)
  5. as neededSesame oil,

Steps

  1. 1

    Crack the eggs into a bowl and beat them. Add the water, dashi powder, and white dashi, and mix well so everything is combined evenly.

  2. 2

    Heat a tamagoyaki (Japanese omelet) pan over medium-low heat and add a little sesame oil. Pour in some of the egg mixture.

    When the egg starts to bubble, roll it up.

    Continue rolling the omelet in your preferred style, adding more egg mixture until all of it is used. Add more sesame oil as needed to prevent sticking.

    Place the finished omelet on a paper towel and gently press to shape it and remove excess oil.

    For a Kyoto-style simmered version, try the recipe by Secret Life (cookpad.com/recipe/23874656). You can also add your favorite flavors to the omelet.

    For a beautiful cross-section, strain the egg mixture and let it rest in the refrigerator for 2 hours before cooking. Adding an extra egg yolk will give a richer yellow color.
