Ingredients

Serves 3 servings
  • 7 ozground pork (200g)
  • 1 packudon noodles (about 7 oz/200g)
  • 1 bunchgarlic chives (nira)
  • 2eggs
  • 1little vegetable oil (for frying)
  • Seasonings
  • 1 teaspoongrated ginger (from a tube)
  • 2 teaspoonssoy sauce
  • 2 teaspoonssesame oil
  • 1 pinchsalt and pepper
  • 1 teaspoonsugar
  • 1 tablespoonpotato starch (katakuriko)

Steps

    Trim the roots off the garlic chives and finely chop them into 1/2-inch pieces.

    Cut the udon noodles into 3/4-inch pieces. It’s easy to cut them by pressing down with a knife over the bag.

    In a bowl, combine the ground pork, eggs, and all the seasonings marked with ☆. Mix well.

    The mixture should be quite loose—that’s correct.

    Add the chopped garlic chives and mix again.

    Next, add the chopped udon noodles and mix everything together by hand.

    Heat vegetable oil in a frying pan. Use a spoon to scoop out bite-sized portions of the mixture, shaping and flattening them as you place them in the pan.

    Cook each side for about 4 minutes, checking for a nice golden brown crust.
