I made the classic fried version of Padrón peppers (Spanish shishito peppers). They pair perfectly with beer, making them a great snack.

I found Padrón peppers, so I made the classic fried version. They are flavored with Parmesan and garlic powder before frying. Padrón peppers look and taste similar to shishito peppers, and like shishitos, some can be quite spicy.

Ingredients

  • 50 gPadrón peppers
  • 15 g●all-purpose flour
  • 3 g●potato starch
  • 1 teaspoon●Parmesan cheese (grated)
  • 1/3 teaspoon●garlic powder
  • 1/4 teaspoon●paprika powder (optional)
  • to taste ●coarsely ground black pepper
  • 1 1/2 tablespoonscold sparkling water
  • 1/2 teaspoonrice oil (or vegetable oil)
  • as neededfrying oil
  • to taste salt and pepper

Steps

  1. 1

    Poke 3-4 holes in each Padrón pepper with a toothpick.

    In a bowl, mix the ● ingredients, then add the cold sparkling water and oil, and mix well.

    Dip the peppers from step 1 into the batter from step 2, then fry in oil heated to 340°F (170°C) until crispy.

    Remove from oil, drain, and sprinkle with salt and pepper while hot.
