A very popular Gujarati dish which normally is a difficult one to get perfect the first time!!! Here I'mein going to share with you a no fail recipe which you can make in a pressure cooker 👍 and also will be better than market bought 😊✌️
Steps

In a steel vessel mix all the ingredients except oil and mustard seeds to make a very thin batter.

Take a big pressure cooker and add about 2 cups of water in it and bring to a boil.

Now place the mixture vessel in the cooker on a inverted plate or a steamer rack and close lid and give 5 whistles on high. Switch off gas and allow the steam to release.

Take out the mixture from the cooker and give it a nice stir.

Immediately spread on backside of steel thalis or on clean kitchen platform... spreading out very thinly.

Spread the grated coconut all over (leaving a bit for the garnish) the spread batter.

Cut into thin strips and roll into khandwi rolls. Place all in the serving dish.

For the tampering.. take oil in a pan ana splutter the rai and pour over the khandwi rolls.

Garnish with coriander and coconut and serve.
