Sweet Pachadi with ripe mango and jaggery

#fs MANGO is one of the ingredients in pachadi on Newyear’s day. No matter it is Tamil New year’s day or ugadi. People of Telugu or kannada origin include all six tates in traditionl ugadhi pachadi. I made the pachadi with ripe mango, jiggery, spices and green chilies.
My recipe is sweet, spicy, and hot.

Prepare a checklist. Keep the necessary ingredients nearby. Dissolve saffron in 1 tablespoon of hot water in a small bowl to give a nice color. Peel the skin of the mango and cut the pulp into small pieces

After melting butter in a sauce pan over medium heat, fry cloves, cardamoms, green chillies, curry leaves and ginger. Add turmeric powder and stir. Add fruit slices, sauté, 3 minutes. Dissolve powdered jiggery in 2 cups of water and add. Let it boil.

Lower the fire. Add cinnamon powder, and saffron. Stir in coconut milk, After a couple of minutes add salt. Stir to mix. Turn off the stove. Transfer the pachadi to a serving bowl.
