Apple and Pork Belly Skewer Katsu

This is the first in a series of fruit-based side dishes. The refreshing tartness of apple pairs perfectly with the rich sweetness of pork belly and goes well with sauce. Great for lunchboxes or as a new addition to your dinner table.

I created this dish because I thought the sweet and tart flavor of cooked apple would go well with the richness of pork belly. Since apple is often used as an ingredient in katsu sauce, it also pairs nicely with these skewers.
Apple and Pork Belly Skewer Katsu

Steps

Cut the apple in half lengthwise. Cut one half into 4 equal pieces. Remove the core from each piece.

Wrap each apple piece with a slice of pork belly.

Wrap tightly.

Keep wrapping until fully covered.

Skewer each wrapped apple with a bamboo skewer. Sprinkle with a pinch of salt.

For the batter, mix the flour, egg, and water together.

Mix well.

Coat each skewer completely with the batter.

Then coat evenly with panko breadcrumbs.

Press gently to help the breadcrumbs stick.

Pour enough vegetable oil into a frying pan so it comes halfway up the sides of the skewers. Heat over medium heat.

Fry at about 320°F (160°C) for 4 minutes.

Flip and fry for another 4 minutes, until both sides are golden brown.

Cut the lemon into 8 wedges.

Arrange the skewers on a plate to serve.

Squeeze fresh lemon over the hot skewers and enjoy with tonkatsu sauce!
