Ingredients

4 servings
  1. -- Pastry ---
  2. 1 2/3 cupplain flour
  3. 125 gbutter
  4. 1egg yolk
  5. -- Filling ---
  6. 5bacon
  7. onion
  8. sweetcorn (optional)
  9. 4-5eggs
  10. 100 mlmilk
  11. 300 mlthickening cream
  12. 1 cupcheese
  13. tomato, sliced (optional)

Cooking Instructions

    To make the pastry base, combine the flour, egg yolk and butter in a large mixing bowl.

    Using your hands to mix until it has the texture of Play-Doh. (In hot weather, the butter melts and the dough is too soft)

    Wrap in clingfilm and put in the fridge for 30mins

  4. 4

    Dice onions and bacon. Cook in a frying pan. Add sweetcorn for the last couple of minutes of cooking.

    Put the pastry in quiche dish. Put back in the fridge for 30mins.

    Mix eggs, milk and cream together. When fully mixed season with salt and pepper.

    Slowly add cheese whilst mixing.

    Remove quiche dish from fridge. Use a folk to poke holes pastry stop bubbling when in oven.

    Put the quiche base in the oven for 10min to create a crust on the pastry.

    (this step will prevent mixture ingrees, keeping a 'short' pastry texture)

    Evenly spread the onion, bacon and sweetcorn from the pan into the pastry dish

    Pour over the egg/milk/cheese mixture over the top

    Add sliced tomatoes if desired.

    Pop in pre-heated oven (160°C) for 30 mins, or until looks cooked

  14. 14

    Let stand for a few minutes before serving.

    Serve with whichever seasonal sides take your fancy
