Stingray wings without an unpleasant odor, rinse with running water and dry with a paper towel. Salt and season to taste.

Preheat the oven to 180 degrees. Bake the stingray wings on parchment paper, preferably under the grill, for about 30 minutes.

Prepare mussel sauce. Boil the mussels using your favorite method. Separate the meat from the shells. Place in blender. Leave a few for decoration. Add mustard seeds and yogurt. Beat.

Add FARMED SAMPHIRE, if desired. It will add freshness and give a beautiful emerald color to the sauce. Season with salt and lemon juice.

Serve stingray wings with leaf salad and mussel sauce.
