Aloo (Potato) and Gobhi (cauliflower) Sabzi is a simple, easy and tasty vegetable sabzi. Aloo Gobhi is mostly served in lunch boxes or as a quick side dish for lunch or dinner.
Steps

Cut the cauliflower into medium sized florets and wash the florets. Boil 2-3 cups of water in a pot. Add a pinch of salt and a pinch of turmeric powder. Then put florets in boiling water.

Switch off the gas and keep the florets in hot water for 5 minutes.
This step is done to remove the worms from the cauliflower, if any. Remove florets from water and keep aside. - 3
Heat oil in a heavy-bottomed pan; Add cumin seeds, mustard seeds, curry leaves, asafoetida.
When the cumin seeds and mustard crackle, then add onion, ginger-garlic paste and saute well. - 4
Next add green chillies and sauté for a minute. Add turmeric, coriander powder and mix well. Add potatoes and fry for 2-3 minutes. Next sprinkle some water.

Cover and cook on low-medium flame until potatoes are half cooked. Then add tomatoes and saute for a minute. Add Red chilli powder, garam masala powder and mix well. Now add cauliflower florets to it. Since the florets are already soaked in hot water, they become a bit tender. So put it at the end.

Sprinkle 2-3 tbsp of water all over and mix well. Add salt and mix. Cover the kadai and pour some water on the lid. Cook on low flame for 5-7 minutes or until the water evaporates and the potatoes and cauliflower are fully cooked.

Check the salt and spice levels and adjust according to your taste. Turn off the gas. Garnish with chopped coriander leaves.

Serve Aloo Gobhi Sabzi in a lunch box or as a quick side dish for lunch or dinner.
