Wash and soak urad dal in water for 4-5 hours or overnight.

Drain the water completely from the soaked dal and grind it to a smooth paste using very little water. The consistency should be thick.

Transfer the batter to a bowl and add chopped green chilies, grated ginger, chopped onion (if using), chopped coriander leaves, and salt. Mix well.

Heat oil in a deep frying pan over medium heat.

Wet your hands with water, take a small portion of the batter, and shape it into a smooth round ball. Make a hole in the center with your thumb to form the vada shape.

Gently slide the vada into the hot oil and fry until they turn golden brown and crispy.

Remove the vadas from the oil and drain.

Serve hot with coconut chutney or sambar or both and enjoy ✨
