Choclillo al Jugo (Beef Roast in Jus)

This choclillo al jugo turned out very flavorful. I cooked it in the oven for 3 hours until it was very tender, and the sauce was fabulous. Just check after 90 minutes to see if you need to add a bit more liquid and turn the meat. I served it with garlic mashed potatoes, which was also delicious. You can serve it with rice or any side you like.

Add a splash of oil to a skillet and, over medium heat, sear the beef roast on all sides until browned. Transfer to a baking dish.

In the same skillet, without cleaning it, sauté the vegetables until lightly browned. Add the spices and cook for a few more seconds. Pour in the white wine and let it reduce. Add the beef broth and heat through. Pour everything over the beef in the baking dish.

Cover with aluminum foil and bake at 350°F (176°C). Bake for 90 minutes on one side. Turn the meat, add more liquid if needed, cover, and bake for another 90 minutes.

Once the meat is cooked, strain the juices. Slice the meat and serve immediately with the jus. I served it with garlic mashed potatoes.
