An easy and quick way to make hawawshi without meat—perfect for a fast breakfast or dinner.

Heat a little oil (not too much) in a pan over low heat. Sauté the onion until it softens, then add the peppers and stir. Add the tomato, herbs, and spices, then finally add the eggs. Stir until the eggs are half-cooked, then remove from heat before they are fully set.

Grease a baking tray with oil. Partially open each loaf of bread and fill with some of the egg mixture, using as much as you like. Arrange the stuffed bread on the tray, brush the tops with oil, and bake in a preheated oven under the broiler for about 4 minutes on each side. Watch carefully so they don't burn, as oven times may vary. Serve with pickles or sliced tomatoes, or whatever you have on hand.
