Sichuan Spicy & Sour Noodles 酸辣粉

This is one of my favorite spicy and sour noodle bowls. It’s bold, full of flavor, and super satisfying. I mix hot oil with garlic, fresh chilies, and spices to make a fragrant sauce, then toss in the cooked noodles and top with bok choy and cilantro. Easy, quick, and so good! Enjoy!
Sichuan Spicy & Sour Noodles 酸辣粉

In a heatproof bowl, add scallions, garlic, red chili peppers, all your spices, chili powder, chili flakes and a spoonful of Sichuan spicy paste.

Heat the oil until shimmering hot, then carefully pour it over the seasoning bowl to release all that bold aroma.

Pour in some boiling water, add in your cooked noodles and salt.

Pour in light soy sauce and black vinegar.

Top with bok choy and cilantro. Stir, slurp, and enjoy the spicy and sour goodness! Enjoy!
