Ingredients

  1. 1 cupMuthokoi (dry maize with husks removed
  2. 1 1/2 cupdry pigeon peas
  3. 1large onion
  4. 2chopped tomatoes
  5. Cooking oil
  6. Salt

Steps

  1. 1

    Boil the muthokoi and peas adding water continuously until cooked

    Once the excess water has been drained,sauté the onion in another pan

  3. 3

    Add the chopped tomatoes

  4. 4

    Cook until the tomatoes soften

  5. 5

    Add salt,royco and little water and bring to boil

  6. 6

    Pour the boiled muthokoi into the already cooking tomatoes sauce and cook for about 8 minutes

  7. 7

    Serve

It's also popular among the Embu community ... Kenya. I love it too especially when you add some minced meat when frying.
