Lima beans ( vaal nu shaak) are used all across India and are very popular in Gujarat. In Gujarat, known as a celebratory food. They are served as special occasions, especially weddings.

Soak the lima beans overnight (or at least 6 hours). Remove soaking water.

In a pressure cooker, add soaked vaal, water, salt and oil. Close lid and cook vaal on a medium flame for 5-6 whistle.

Heat oil in a pan; add mustard seeds cloves and cinnamon. Let it splutter then add asafoetida and lima beans.

Now add all the spices mentioned above and mix well.

At last add jaggery and lemon juice. Cook it for 4-5 minutes.

Finally, serve it hot with roti.
