Today in the morning, I received a message from Elena at Cookpad, inviting me to publish taco recipes. So, I went out, bought some lamb, and started cooking my tacos.

This recipe is made with lamb, but if you can't find it, pork or beef works well too.

Cut the meat into small pieces and cook it. I use a pressure cooker for speed, with enough water to cover, bay leaves, and salt for about 30 minutes.

In a couple of cups of the broth, add the chiles, garlic, onion chunk, cinnamon, and cumin. Cook until the chiles are soft.

Remove the meat and shred it. Set aside.

In a pan, sauté the chopped onion with a little oil. When it starts to pop, add the strained sauce. When it boils, add the meat. Let it cook for about 5 minutes. It should remain juicy, not dry.

Serve in warm tortillas with chopped onion, cilantro, and your preferred salsa.
