Slow Cooker Thai Green Curry Chicken

I love Thai food. My friend from Thailand, would either make some for me or take me to his cousin's restaurant. I used to make this recipe all of time on the stove, but once we got our slow cooker, I decided to try it in there. For this, I added spinach and carrots. I would have eaten this with just the carrots. Something amazing happened to them.

Serve with rice or noodles.

Enjoy!

Ingredients

6 Hours
6-8 servings
  1. 2 lbsboneless, skinless chicken breasts or thighs, diced
  2. 8 ozfrozen spinach, thawed
  3. 8 ozfrozen carrots, thawed
  4. 1 can (13.5 oz)full fat coconut milk
  5. 4-6 tbspgreen/red curry paste
  6. 1 tbsplime juice

Steps

6 Hours
  1. 1

    Layer chicken on the bottom of the slow cooker.

  2. 2

    Place the spinach and carrots on top of the chicken.

  3. 3

    In a small bowl, whisk together coconut milk, green/red curry paste, and lime juice.

  4. 4

    Pour the mixture on top of the chicken, spinach, and carrots.

  5. 5

    Cook on low for 6 hours.

  6. 6

Since I was a kid, I remember sitting in the kitchen to watch and/or help my parents. As I grew up, I decided to try their recipes and experiment with different recipes. Some were very good and I re-make them all of the time. Others? Yeah, I never tried them again. All of the recipes that I post are the very good ones.Also, while growing up, my pops suffered from high blood pressure, so my mom stopped adding sodium. Since that is how I was raised, all of the dishes that I post do not have any extra sodium added to it. A lot of friends and family who try my recipes, either do not notice nor miss it. But in no way am I saying not to add salt if you use my recipes. If you want to add it, then go for it.In closing, I hope that you enjoy my recipes. If you use any, then please post pictures. Enjoy!
