Ingredients

30 minutes
4 to 6 servings
  • 2Andouille Sausage links, coined
  • 4medium potatoes, diced
  • 2 cupsfresh green beans
  • 2crowns fresh broccoli, chopped
  • 1/2of each bell pepper: green, red, yellow and orange, diced
  • 1small onion, chopped
  • 1/4 cupolive oil
  • 2 tsp.garlic powder
  • 2 tsp.dried oregano
  • 2 tsp.paprika
  • 2 Tbsp.dried parsley
  • 1/2 tsp.ground red pepper
  • to tastesalt and pepper

Steps

30 minutes
  1. 1

    Preheat oven to 400 degrees.

  2. 2

    In a very large bowl, toss all ingredients together.

    Equally lay out onto 2 large baking sheets.

    Cook for 15 minutes. Remove from oven and stir; place back in oven and cook for additional 15 minutes.

    Tip: Pre-cut all veggies and sausage and throw in zip lock bag and freeze for future meal. Unthaw and throw in olive oil and seasonings for an ultra quick weeknight meal!
