  1. 1/4 kgmatumbo
  2. 1Onion
  3. 1garlic
  4. 15 mloil
  5. 2large tomatoes
  6. 2 TbspRoyco

Steps

  1. 1

    Cut the matimbo into middle size pieces.

  2. 2

    Wash the matumbo, and put in a cooking pan to boil for about 3 hours or until soft.

  3. 3

    Then in another cooking pan put 15mls of oil and add the onion and garlic. Then fry until golden brown

  4. 4

    Add the tomatoes and cook until soft adding little water if the mixture starts sticking to the surface

  5. 5

    Add the matumbo to the stew and mix well

  6. 6

    Add hot water and simmer for 3 minutes.

  7. 7

    Then dissolve royco in cold water before pouring into the simmering stew. Then pour to the stew and continue cooking.

    Cook for 2 more minutes to allow the stew to thicken

  9. 9

    Servewhile hot with rice or ugali.
