Marinate chicken with olive oil salt and pepper.

Melt the butter add onions, garlic sauté, then and capsicums and spinach and some water and let it cook. Add fresh cream and mascarpone. Season with salt and pepper

In a baking dish, lay down the open chicken breast add the spinach mixture in it and top it with cheese.
Cover and cook in a preheated over for 40 minutes
