I made Laksa which is a famous Malaysia cuisine and made it Vegan adding cabbage and broccoli as main garnish

In a wok boil water and add broccoli florets, blanch and set aside. Add peeled and cut carrots and blanch. Sauté mushrooms, chop cabbage fine, set aside

Soak red chiliies and cashews for 1 hour each. Drain and add to blender. Add turmeric powder, garlic, ginger, onion, salt, chopped red chilli and blend coarsely, add water and blend smooth. Laksa base is ready

Cook noodles and drain, set aside

In a wok heat oil, add spice paste and cook for 3-4 mins, add water and cook for oil to surface, add coconut milk, add veg stock and cook, set aside

To assemble - in a bowl add cooked noodles, add blanched broccoli, chopped cabbage, blanched carrot, sautéed mushroom and pour the soup base, garnish with chopped red chiliies
