Carrot Apple Loaf

Preheat oven to 180C. Line a loaf pan with parchment paper and set aside

Whisk together flour, bicarbonate soda, baking powder, salt, cinnamon, and nutmeg

In a different bowl, thoroughly whisk eggs. Add the oil, sugar, and vanilla. Beat well to combine

Stir in the carrots and apples

Gently fold in the dry mixture into the wet mixture. Do not over-mix, mix just until there are no longer dry patches

Bake for 60 minutes or until a toothpick inserted into the center comes out dry, with just a few moist crumbs on it

Cool in the pan for 10 minutes, and continue cooling on a rack
