This soup is perfect for hot weather—especially if you serve it with a few pieces of pickled eggplant! Week 1: taro, ground pork.

Bring a pot of water to a boil. Add the ground pork and skim off any foam as it cooks. Peel the taro and cut into pieces. Cut the water spinach into sections. Once the pork broth is boiling, add the taro and cook until tender. Then add the water spinach and season the soup to taste.

Turn off the heat, ladle the soup into a bowl, and sprinkle black pepper on top.
