Cooking Instructions

Prepare the broth first with celery, carrot, onion, and meat (muscle), and cook for about 2 hours. Boil the potatoes for about 30 minutes. At this point, you can prepare the salad. Shred the pieces of meat and remove the fattier parts like filaments and tendons, and place in a bowl. Also, cut the boiled potatoes into wedges and add to the same bowl, gradually seasoning with other ingredients.

Cut the tomatoes into pieces, peel the cucumbers, and cut into cubes. At this point, season with freshly chopped parsley, oregano, salt, and extra virgin olive oil. Finally, add the grated lemon zest and lemon juice. Mix all the ingredients, cover with plastic wrap, and refrigerate until ready to serve.

You can also add red Tropea onions and radishes, or any raw vegetables.

I came up with this recipe when I was living in Canada. The cucumbers sold there were a bit different from Japanese cucumbers, so I started adding other vegetables instead. I add a tiny bit of Canadian maple syrup as a secret ingredient.If you add a small amount of capers, the flavor will really come together. (You can omit them if you like though.)
