Maharashtrian Chiwda with roasted gram

Chiwda ( चिवडा) , the name itself makes your mouth water . This is a favourite and staple snack and the Maharashtrian Chiwda with poha, murmura , peanuts, coconut and dalwe or roasted gram is a must eat in Diwali, Dussehra and a favourite tea time snack. It can be summed up as a savoury millet and nuts mix with spices, roasted dry curry leaves and chillies. It's rich in protein, fibre, vitamin B complex and loads of energy! Do try the recipe.

First, take a deep based large kadhai. Dry roast poha on medium heat by continuously mixing for 10 minutes. It's fine when colour is very light cream and poha breaks easily with fingers

Transfer it to a large plate to cool to room temperature. Then mix all the spices in a bowl and keep ready.

Heat oil in the same work. Add mustard seeds, cumin seeds, hing, curry leaves and chopped green chillies. Fry well till they are aromatic, crispy and crackling sound is heard.

Now add peanuts, roasted gram, cashews, coconut and fry till golden. Turn off the heat.Then pour this on roasted poha and give a mix.

Now heat the pan and dry roast all the spice powders for a few seconds. Then add the poha and nuts and stir well for 5 to 10 minutes till well combined.

Turn on heat to minimum and stir roast for 5 minutes. Then again switch off the heat and cool to room temperature. Then you can enjoy it as it is or by topping with chopped onions, tomatoes and green chillies with lemon juice.

Store it in airtight containers of stainless steel or glass which are lined with kitchen paper to absorb excess oil. Place another kitchen paper on top and then close the lid tightly and then serve! Enjoy!
