Cooking Instructions
- 1
Buy organic grapes only. 86% of chinese non-organic grapes were found to have pesticides on them, or organophosphates for artificial ripening. Washing grapes removes the sugar on the skins, not the pesticide residue. Pick unwashed organic grapes and lay out 20 grapes per row, without touching each other, 3 rows per foot, seven feet total, 7 pounds, cover with nylon fly screen to keep the insects and birds out.
- 2
Pick out the smaller grapes and taste. If sour, set aside to make fresh grape vinegar called Verjus Grape Vinegar, delicious.
- 3
Taste daily till your sultana golden raisins are perfect. Collect grapes in full sun in the afternoon when all morning dew and humidity have evaporated. For oven drying, lay grapes on parchment paper. Pack one pound per ziplock bag. Good for two years.
