Firstly boiled the echor
(raw jackfruit) pieces and potato pieces along with salt and turmeric powder. Wait for 4 to 5 whistles. Now discard the water and keep the jackfruit pieces aside. - 2
Now heat a pan, add 3 tbsp of mustard oil. When the oil gets hot add all the khada masalas mentioned above in the ingredients section. When they starts spluttering add chopped tomatoes in it and fry them for about 3 minutes until it becomes little mushy.

Then add grated onion to it and mix it well with the tomatoes. Then add ginger-garlic paste and combine everything well as shown below.

Now add all the dry masalas mentioned above in the ingredients section like coriander powder, cumin powder, garam masala, turmeric, kashmiri red chilli powder, salt and sugar. Mix everything well with the masala. Keep the flame low and fry the masala until oil starts releasing.

Now add the jackfruit pieces in it and combine everything well with the masalas. Add half cup of lukewarm water amd mix everything well. Now cover the pan and let it cook for about 8 to 10 minutes on a low flame.

Open the lid, add a tsp of garam masala and chopped coriander and give it a final mix. Switch off the flame and serve it hot with steamed rice or with hot rotis.
