California Farm Ginger Ale

This is the first recipe my son made for his friends. He used locally grown ginger roots. He was ten years old. We still have his handwritten recipe. He made it in my recycled beer bottles with porcelain recloseable caps. His friends each got a bottle, they were impressed. When they opened them and the ginger ale fizzed, they pretended they drank real beer.

Cooking Instructions

Grate fresh ginger root. Red cores or tips means they are young roots.

Use funnel to put sugar, yeast, and grated ginger in plastic jug
- 3
Fill jug with water, let ferment overnight, the fermentation will carbonate the ginger ale and make the bottle feel hard, when hard, put in fridge to stop fermentation. Filter ginger ale into bottles through filter. Put in fridge. Ready to serve.

A low alcohol version of the traditional margarita, using sparkling apple cider as the alcohol carrier for the drink, with lime and 2 Tbs Tequila or Mescal and Cointreau per tall glass for flavor. We have an authentic old Italian food grade tabletop wine press, stainless steel, from Francesco Palumbo, two quart/liter capacity, and a matching capacity sauerkraut crock pot with airlock.You can use a hand lemon press if you dont have a table press and punch a hole in a mason jar lid to put an airlock in.
