Make slots on tortilla to prevent them from puffing while frying. Shallow-fry tortilla in a wide pan on both the sides till they are crisp. Flip in-between for even frying. If you want to skip frying, you can also bake them. But fried tortilla will have the melt-in-mouth crunch.

Refried beans: pressure cook beans with only as much water as is needed to cook them thoroughly. Once cooked, drain out extra water if it is quite much. A little moisture is fine. Coarsely grind the beans without water.

Heat oil and saute garlic till they are light brown. Add the beans, the spices and the green chillies. Combine all well and cook till everything looks well blended and extra moisture is burnt. It should be spreadable consistency, but not watery otherwise the tortilla will get soggy.

To assemble: place a tortilla in a baking tray. Evenly spread a layer of refried beans. It should be a thin layer of it, not too much, nor too little. Sprinkle the cheese. Place another tortilla on the top. Apply a layer of salsa followed by cheese and the vegetable topping.

Grill it at 200c till you get the brown spots on cheese. But if you see that the sides of the tortilla is getting dark, you may grill only till the cheese melts well, the pizza is hot enough that it releases aroma. That's the sign that all the elements and the flavours are blended thoroughly.
