Ingredients

  • 2mangoes finely chopped
  • 1 cupmango pulp
  • 1 cupvermicelli
  • 1 litremilk
  • 1 tablespoonghee
  • 5 tablespoonsugar
  • 1 tablespoonslivered pistachios
  • 1 tablespoonslivered almonds
  • 1 teaspooncharoli
  • 1 tablespooncashews
  • 1 tablespoonraisins
  • 1 tablespoondried cranberries
  • 1/2 teaspooncardamom powder
  • 2 tablespooncustard powder
  • 1/2 cupcold milk

Steps

    In a pan, on medium heat add ghee and let it melt. Once it melts add all the nuts and saffron. Roast for 2 minutes until lightly golden. Add vermicelli to it and roast for further 2 to 3 minutes. Add milk and bring it to boil while stirring occasionally.

    Cook for 3 to 4 minutes until vermicelli is cooked and starts floating on top. Add sugar and cardamom powder and cook for further 2 minutes.
    Mix 2 heaped tablespoon of custard powder with 2 tablespoon cold milk and stir to make a smooth paste. Add in the remaining milk and stir until incorporated.
    Add custard to the boiling milk while stirring continuously.

    Cook for around 3 minutes. Turn off the gas and transfer in a bowl. Keep stirring occasionally for 5 minutes otherwise it will form a film on top. Let it cool completely.

    Once it cools completely add mango puree to it and half of chopped mangoes. Mix well. In a dessert cup half fill with cooled vermicelli and add a layer of chopped mangoes. Top it up with vermicelli and garnish with chopped mangoes and nuts. Refrigerate until cool.

Hi all, my name is Rekha. I am Indian by birth, born in Uganda, East Africa, I now live in Wilby, Northamptonshire/England.I retired at the age of 60 due to severe arthritis. I am married, a mother and grandmother.I learnt to cook from my parents at a very young age of seven. I started to cook simple dishes for the family and gradually learnt how to cook. My mum use to cook at our shop where we sold Indian sweets and savouries. I have learnt a lot from my mum. I started cooking fusion dishes and learning from others. My strong point is making sweet dishes and innovating new dishes. I can improvise and be creative in leftover dishes.I love being on Cookpad because I can share and learn new recipes. I have also made a lot of friends.
