Viennese Potato Salad

One summer when we visited Vienna, we ordered potato salad as a side dish. At first glance, it didn’t look like much—juicy, nothing special in appearance. But the taste was a real surprise: wonderfully flavorful and smooth, it was the perfect side. I tried to figure out the ingredients, and they seemed simple enough. We had it again in Bratislava, just as delicious. When we got home, I looked for a recipe and was surprised to find that Viennese potato salad is one of the most iconic dishes in Austrian cuisine. I checked out a few recipes and created my own version, adding my personal touch. It’s a very simple salad, perfect as a side dish, but it can also be a complete meal on its own. Peel and wash the potatoes, then cut them into medium-sized cubes. Place them in a pot with plenty of water, add salt, and bring to a boil. Cook until the potatoes are tender but not falling apart. Remove from heat and use a slotted spoon to transfer the potatoes to a bowl. Let them cool. Save some of the potato cooking water for later.

Once the potatoes have cooled, add the finely chopped onion. Add pepper. Don’t add more salt yet—taste at the end and adjust if needed. Gently mix. Combine all the dressing ingredients and whisk with a fork. Pour the dressing over the potatoes and mix. The salad will be quite juicy at first, but as it sits, the liquid will be absorbed. Taste and add more salt if needed.

Transfer to a serving bowl. Enjoy!
