Viennese Potato Salad

One summer when we visited Vienna, we ordered potato salad as a side dish. At first glance, it didn’t look like much—juicy, nothing special in appearance. Ingredients

  1. 4medium potatoes
  2. 1small onion or 1 green onion
  3. Salt and pepper
  4. For the dressing:
  5. 8 tablespoonsolive oil
  6. 10 tablespoonspotato cooking water
  7. 1 tablespoonvinegar
  8. 1 tablespoonmustard

Steps

    Peel and wash the potatoes, then cut them into medium-sized cubes. Place them in a pot with plenty of water, add salt, and bring to a boil. Cook until the potatoes are tender but not falling apart. Remove from heat and use a slotted spoon to transfer the potatoes to a bowl. Let them cool. Save some of the potato cooking water for later.

    Once the potatoes have cooled, add the finely chopped onion. Add pepper. Don’t add more salt yet—taste at the end and adjust if needed. Gently mix. Combine all the dressing ingredients and whisk with a fork. Pour the dressing over the potatoes and mix. The salad will be quite juicy at first, but as it sits, the liquid will be absorbed. Taste and add more salt if needed.

    Transfer to a serving bowl. Enjoy!
