Ingredients

12 servings
  1. 4 cupsbread flour (about 500 grams)
  2. 1/2 cupsugar (about 100 grams)
  3. 1/2 teaspoonsalt
  4. 1/2 teaspoonwhite vinegar
  5. 1 teaspoonvanilla extract
  6. 3 tablespoonsunsalted butter, at room temperature (about 40 grams)
  7. 1/2 cupcold water (about 125 grams)
  8. 1/2 cupcold milk (about 120 grams)
  9. 1 tablespooninstant yeast (about 9 grams)
  10. 2medium eggs
  11. For topping:
  12. Melted butter

Steps

    Add all the ingredients to the bowl of a stand mixer and knead with the dough hook for 15 minutes, until the dough pulls away from the sides.

    Transfer the dough to a greased bowl.

  3. 3

    Cover with plastic wrap and let it rise in a warm place until doubled in size, about 1 to 1 1/2 hours.

    Grease your hands and work surface with oil, then divide the dough into 12 pieces, each about 2 2/3 ounces (75 grams).

    Shape each piece into a ball and place them on parchment paper.

    Cover with a towel and let them rise in a warm place until puffy.

    Once risen, bake in a preheated convection oven at 320°F (160°C) for 15–18 minutes.

    As soon as you take them out of the oven, brush both sides with melted butter and roll them in sugar.
