Add all the ingredients to the bowl of a stand mixer and knead with the dough hook for 15 minutes, until the dough pulls away from the sides.

Transfer the dough to a greased bowl.

Cover with plastic wrap and let it rise in a warm place until doubled in size, about 1 to 1 1/2 hours.

Grease your hands and work surface with oil, then divide the dough into 12 pieces, each about 2 2/3 ounces (75 grams).

Shape each piece into a ball and place them on parchment paper.

Cover with a towel and let them rise in a warm place until puffy.

Once risen, bake in a preheated convection oven at 320°F (160°C) for 15–18 minutes.

As soon as you take them out of the oven, brush both sides with melted butter and roll them in sugar.
