Coconut Rice Pudding

Today we're making a delicious rice pudding using coconut milk beverage, coconut milk, shredded coconut, coconut extract, and for garnish, dulce de leche. It's quick and easy to make, with a very tasty result.

Today we're making a delicious rice pudding using coconut milk beverage, coconut milk, shredded coconut, coconut extract, and for garnish, dulce de leche. It's quick and easy to make, with a very tasty result.

Gather all the ingredients.

In a saucepan, pour 1 1/4 cups coconut milk beverage (300 ml, set aside the rest from the liter). Heat over medium. When it starts to boil, add the rice and cook for 5 minutes, stirring constantly. After 5 minutes, the rice will have absorbed almost all the liquid.

Add the remaining 3 cups coconut milk beverage (700 ml), the coconut milk, lemon peels (make sure there's no white pith), and cinnamon sticks. When it starts to boil, lower the heat (on my stovetop with 9 settings, I set it to 5) and cook for 15 minutes, stirring to prevent sticking. After 15 minutes, remove the lemon peels and cinnamon sticks. Add the sugar and mix well.

While stirring, add the shredded coconut and coconut extract. Mix everything well and cook for 5 more minutes, stirring constantly. After that, remove from heat. The mixture should still have a little liquid.

Divide the rice pudding into small cups. It will be a bit soupy, but the rice will absorb some of the liquid.

Garnish with dulce de leche (I used dulce de leche because it tastes amazing with coconut).

Place the cups on a serving plate.
