Mixed Vegetable Curry, also known as "Mix Veg," is a versatile and flavorful dish commonly found in Pakistani and Indian cuisine. It can be made with a variety of vegetables and is often served with flatbreads like roti or naan, or with rice.
Mixed Vegetable Curry is not only delicious but also a great way to incorporate a variety of vegetables into your meal, making it both nutritious and satisfying. Feel free to use any seasonal vegetables of choice. However, for authentic Mix Veg the main vegetables are potatoes, carrots and peas with a hint of dried fenugreek leaves. This is essentially why it is commonly referred to as “Aloo Matar Gajar”, where aloo is potato, matar is peas and gajar is carrot.
This one-pot has no actual sauce or curry. It is basically vegetables coated in a savory masala, then simmered to perfection.
The beauty of this dish is in its simplicity and not photogenic!

Steps

Heat oil in a pot over medium heat.

Add cumin and mustard seeds, stir to splutter.

Add ginger-garlic paste, stirring and cook for 1 minute.

Add onion and cook till golden brown.

Add tomato paste, splash of water, and powdered spices. Cook until oil separates.

Add the vegetables and water and mix well. Cover and cook till vegetables are tender.

Uncover and cook on high flame, stirring occasionally, to desired consistency of sauce.

Serve with roti, paratha or naan.
