Ingredients

30 minutes
4-6 servings
  1. 2-3potatoes, cubed
  2. 2-3carrots, peeled, chopped
  3. 3 tbsp.oil
  4. 1 tsp.cumin seeds
  5. 1 tsp.mustard seeds
  6. 2 tbsp.ginger-garlic paste
  7. 1onion, diced
  8. 1 tbsp.tomato paste
  9. 1 tsp.garam masala
  10. To taste, chilli powder
  11. To taste, salt
  12. 1 tsp.turmeric
  13. 1 cupscauliflower florets
  14. 1/2 cupfresh beans
  15. 1/2 cupfrozen peas

Steps

30 minutes
  1. 1

    Heat oil in a pot over medium heat.

  2. 2

    Add cumin and mustard seeds, stir to splutter.

  3. 3

    Add ginger-garlic paste, stirring and cook for 1 minute.

  4. 4

    Add onion and cook till golden brown.

  5. 5

    Add tomato paste, splash of water, and powdered spices. Cook until oil separates.

  6. 6

    Add the vegetables and water and mix well. Cover and cook till vegetables are tender.

  7. 7

    Uncover and cook on high flame, stirring occasionally, to desired consistency of sauce.

  8. 8

    Serve with roti, paratha or naan.
