Add all the ingredients to a blender in the order listed and blend until smooth.

Heat a nonstick skillet over medium heat. Grease with plant-based butter or corn oil, then pour about 1/3 cup of batter onto the skillet. Cook until bubbles form, then flip and cook until golden on the other side, about 1-2 minutes. Repeat with the remaining batter.

If you like, sprinkle blueberries on top of the batter after pouring it into the skillet, then flip and cook as usual until both sides are done.

Serve with vegan butter, maple syrup or honey, and maybe some fresh fruit.
