Dry roast ½ cup red poha. Then mix it in a blender to make a fine powder. ½ cup red poha will make almost ¼ cup fine powder.

Chop almonds, pistachios, cashew nuts. Keep aside some chopped almonds, cashews and pistachios for garnish.

Boil 500 ml of milk in a heavy bottomed pot. When the milk starts boiling, keep the gas on low flame.

Add red poha powder and stir well so that there are no lumps. Cook on low flame for 5 minutes, stirring constantly. So that the pudding does not stick to the bottom.

Then add chopped almonds, cashews, pistachios (keep some dry fruits aside for garnishing). Cook the kheer mixture on low flame till it thickens.

Stir constantly while cooking so that the pudding does not stick to the pan and also scrape the sides of the pan. If the mixture is too thick, add a little milk. Simmer and cook on low heat.

Then add jaggery powder. Stir well and cook for 3-5 minutes. Then add cardamom powder, mix well and cook until jaggery dissolves.

Turn off the gas. Serve red poha kheer in bowls and garnish with chopped dry fruits on top.

The kheer thickens when it cools so add a little milk and reheat.
