Ingredients

40 minutes
Serves 2 servings
  1. 5 2/3 ozmixed pasta (160 grams)
  2. 1 3/4 cupspotatoes, peeled and diced (about 250 grams)
  3. 2 2/3 ozprovola cheese (smoked or regular, as you prefer) (75 grams)
  4. 1/2 cuponion, finely chopped (about 60 grams)
  5. 1/2 cupcarrot, finely chopped (about 60 grams)
  6. 1/2 cupcelery, finely chopped (about 60 grams)
  7. 4cherry tomatoes, halved
  8. 4 1/4 cupsbeef broth (1 liter)
  9. 3 tablespoonsolive oil
  10. 1 pinchsalt
  11. 1 pinchblack pepper
  12. 2 sprigsrosemary

Steps

  1. 1

    Peel and dice the potatoes into small cubes.

    Finely chop the onion, carrot, and celery.

    Cut the cherry tomatoes in half.

  4. 4

    Cut the provola cheese into cubes.

  5. 5

    In a medium saucepan, heat the olive oil over medium heat.

  6. 6

    Add the chopped onion, carrot, and celery. Sauté until they are tender.

  7. 7

    Add the diced potatoes and cherry tomatoes. Cook together for a few minutes, then add the rosemary sprigs.

    Pour in enough beef broth to cover the potatoes.

    Bring to a boil, then reduce the heat and simmer until the potatoes are almost cooked through.

    Add the mixed pasta directly to the pot with the potatoes and cook until al dente, stirring occasionally. Add more broth if needed.

    When the pasta is almost done, add the cubed provola cheese and stir well so it melts and blends with the pasta and potatoes.

    Season with salt and pepper to taste.
